These are just a few of my first meals for the new year.
Baked tortilla chips with spicy Pico de Gallo – salsa fresca. (made withs red pepper, tomato, onion, coriander leaves, basil, fresh serranos, salt, onion, avocado and lime juice. )
This is a veggie omelet filled with broccoli, zucchini, cucumber and peppers with a side of diced carrots, onions, beans and crisp tortilla, along with an antioxidant smoothie (green tea, blueberry, banana and soy milk) on the side.
This is a veggie sandwich, served with slices of whole wheat bread, lettuce, tomatoes, avocado, vegan soy cheese and a side of fresh seasonal fruit, diced papaya, watermelon and cantaloupe.
Whole-grain bread slices with eggs, basil, spinach, kale and a layer of melted cheese.
This was ordered at one of my favorite restaurants La Cozumelena, a Mexican Vegan restaurant. This is Vegan Quesadilla. West Tortilla with hummus avocado slices, sautéed mushrooms, vegatables (bell peppers, onions, tomatoes and olives) garnished with almond butter over cucumber and sweet potato chips.
Waffles with special mantequilla/butter, granola and oats with greek yogurt, and fresh fruits on the side. (grapefruit, orange, papaya, cantaloupe, strawberry, and banana) Along with a pure watermelon smoothie.
Veggie Sandwich with lettuce, tomatoes, onions, peppers and avocado. + a side of heavily salted french fries.
This is a Mexican Skillet. Eggs, potatoes, crisp tortilla, peppers, onions, mushrooms, carrot, and beans with an antioxidant drink on the side.
All sliced veggie- carrots, peppers, onions, mushrooms- with flour and corn tortilla, served with tortilla chips, guacamole, salsa and tomatoes.
When the whole menu contains meat, a girls gotta improvise. I ordered a customized meal, sliced sautéed vegetables- onions, mushrooms, carrots, green peppers with black beans, tortilla chips and a scoop of rice on the side.
Pasta pasta pasta. Heaven. Vegetarian Pasta, with large diced tomatoes, summer squash and plenty of basil. and a large coconut on the side of course :p
My favorite type of burger. This is a Wild Mushroom burger with cucumber, mayo and arugula served with sweet potato chips.
Bosque Pancakes, whole grain flour, raisins, oats served with vegan soy cheese, strawberries and blueberries. On the side I ordered a natural parfait with oats, banana, amaranth, citrus and tascalate granola. (Prehispanic drink made with maize, cacao, cinnamon and axiote) The perfect breakfast.
Spicy Miso broth with ramen, no meat and extra extra veggies.
Fluffy pancakes with blueberry Jam.
